Make Your Own Jiffy Corn Muffin Mix

Who doesn’t love Jiffy Corn Muffin Mix. Quick easy and something most of my American friends grew up on. 
Making it from scratch is not only much cheaper, but most importantly there are no mystery ingredients. 

ingredients

2/3 cup all purpose flour
1/2 cup yellow corn meal
3 tablespoons granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt

instructions

Combine flour, corn meal, sugar, baking powder and salt. Mix well with whisk until mixture is smooth and lumps are gone. 
Add to plastic ziploc bags, or mason jars, and label with instructions:
 
to make corn muffins:
Preheat oven to 400 degrees F
Combine above mixture with 1 egg, 1/3 cup milk and 2 tablespoons vegetable oil
Bake 15-20 minutes
Makes 6 muffins

Secret to juicy breasts EVERY TIME is to cook the bird breast side down. That way all the juices run into the breasts, so it can even handle some over cooking and still be juicy. Face down ass up is a great position for just about anything with breasts you want to keep moist.

  • 1 cup All purpose flour
  • 2 tablespoons corn starch

instructions

  1. Measure out 1 cup of all purpose flour and take out 2 tablespoons of flour
  2. Add 2 tablespoons of corn starch
  3. Combine well and sift. Then sift again. And again. And again.
  4. Voilà! You have cake flour.

Self Rising Flour is one of those ingredients I never seem to have on hand. Making my own has  saved many cakes and scones.

ingredients

  •  1 cup All Purpose Flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

instructions

1. Combine all of the ingredients. Then, use a whisk or sieve to mix thoroughly.

Make Your Own Baking Powder

Baking powder is a combination of potassium bitartrate (cream of tartar) and sodium bicarbonate (baking soda). Usually cornstarch is added to prevent clumping.

Not only is making your own baking powder cheap and easy, it’s also free of unnecessary additives and aluminum free.

Make 1 Tablespoon of Baking Powder:

ingredients

  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1 teaspoon corn starch (optional)

instructions

  1. Mix the baking soda and cream of Tartar together until well combined.
  2. Use Immediately
  3. If you plan to store your baking powder, add cornstarch to prevent clumping. Store in air tight container.

Day old or left over rice works best for fried rice and many other rice dishes. If you don’t have any on hand, cook rice and spread out on a cookie sheet pan or tray and put in the freezer for about 30 mins.
